Method
Cocktail
Combine ingredients
Add the pau vodka (2 oz), lychee purée (1 oz), fresh lemon juice (0.5 oz), pineapple juice (0.5 oz), and simple syrup (0.25 oz) into a cocktail shaker.
Add ice
Fill the shaker with about 6 medium ice cubes (enough to cool and dilute the drink properly).
Shake
Secure the shaker and shake vigorously for 12–18 seconds until the outside of the shaker becomes very cold and slightly frosted. This both chills and integrates the thicker lychee purée.
Double-strain and serve
Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne or built-in shaker strainer and a fine mesh strainer to remove ice shards and any lychee solids for a silky texture.
Garnish
Skewer the canned lychee on a cocktail pick and rest it across the rim or drop it into the drink. If using, express a lemon twist over the surface to release oils and place it on the rim; optionally add a pineapple leaf or mint sprig for aroma.
