Prepare the Filling

In a large mixing bowl, combine ground pork, shrimp, cooked rice vermicelli, chopped mushrooms, grated carrot, minced garlic, and chopped green onions. Add soy sauce, black pepper, and salt to taste. Mix well until all ingredients are combined.

Wrap the Spring Rolls

Soak rice paper wrappers in warm water one at a time until soft. Place a tablespoon of the filling mixture in the center of the wrapper. Fold in the sides and roll tightly from the bottom to the top, sealing the edges with a little water.

Fry the Spring Rolls

Heat vegetable oil in a deep frying pan over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Serve

Serve hot with dipping sauce such as hoisin or nuoc cham.
