Dough & base
Preheat and prepare
Place an oven rack in the lowest third of the oven and preheat to 500°F (260°C) for at least 30 minutes. If using a pizza stone, place it in the oven while preheating. If using a baking sheet, invert it and preheat as well.
Shape the dough
Lightly dust a work surface with 1–2 tablespoons of flour. Stretch or roll the pizza dough into a roughly 12-inch circle, about 1/4 inch thick, leaving a slightly thicker edge for the crust. Transfer the shaped dough to a pizza peel dusted with semolina or to the back of an inverted, lightly floured baking sheet if not using a peel.
Brush the outer 1/2-inch of the crust lightly with 1 tablespoon olive oil to promote browning.
Sauce
Season the sauce
In a small bowl, mix 3 tablespoons marinara sauce with 1 teaspoon minced garlic, 1 teaspoon dried oregano, and 1/4 teaspoon red pepper flakes (if using). Stir to combine. Taste and adjust seasoning if needed.
Spread the seasoned marinara evenly over the dough, leaving the oiled 1/2-inch rim uncovered. Use about 3 tablespoons to create a thin, even layer that won't make the crust soggy.
Cheese
Add mozzarella
Distribute 8 oz shredded or thinly sliced fresh mozzarella evenly over the sauced dough, covering most of the surface but leaving the crust clear. If slices are wet, pat them lightly with a paper towel before placing to avoid excess moisture.
Add Parmesan
Optionally sprinkle 1 tablespoon grated Parmesan lightly over the mozzarella for extra umami.

Prepare vegetables
Toss sliced mushrooms (4 oz), thinly sliced 1/2 onion, 1/2 red bell pepper (thin strips), 1/2 green bell pepper (thin strips), and 1/4 cup sliced black olives in a bowl with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper. This seasons the vegetables and draws out a bit of moisture from the mushrooms so they cook faster.
Baking & finishing
Bake
Slide the pizza onto the preheated stone or baking surface. Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway through if your oven has hot spots. Look for a golden-brown crust, bubbling cheese, and cooked vegetables. Thin crusts may finish in 7–8 minutes; thicker crusts may take up to 12.
Finish and rest
When the pizza is done, remove it from the oven. Immediately drizzle 1 teaspoon olive oil over the top and sprinkle torn fresh basil leaves (about 6 leaves) and the optional grated Parmesan if desired. Let the pizza rest 2–3 minutes to allow the cheese to set before slicing.
