Sauce (Spicy Homemade Sauce)

Prepare sauce

Heat 1 tablespoon olive oil in a small saucepan over medium heat. Add minced garlic and cook until fragrant, about 30 seconds — do not brown. Stir in tomato paste and cook 1 minute to remove raw flavor. Add tomato sauce, red pepper flakes, smoked paprika, hot sauce, dried oregano, dried basil, sugar, salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and cook uncovered for 8–10 minutes, stirring occasionally, until slightly thickened. Taste and adjust heat/salt as desired. Remove from heat and let cool while preparing other components.

Cook bacon and sausage

Cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning as needed. Transfer to paper towels to drain and cool, then roughly chop into bite-size pieces. In the same skillet, remove most bacon fat leaving ~1 teaspoon; add crumbled Italian sausage and cook over medium heat until browned and cooked through, about 6–8 minutes, breaking up with a spoon. Drain excess fat if necessary and set sausage aside to cool slightly.

Prep ham and cheese

If using slices, stack and dice the ham into small pieces. Shred mozzarella if not pre-shredded and measure 2 cups. Thinly slice red onion if using.

Preheat and prepare dough

Place a pizza stone in the oven if available and preheat oven to 500°F (260°C) for at least 30 minutes (425°F/220°C if your oven cannot reach 500°F). If you do not have a stone, preheat a heavy baking sheet upside down. Lightly dust a pizza peel or work surface with 1 teaspoon cornmeal or semolina. Stretch or roll the pizza dough into a 12-inch round, leaving a slightly thicker rim for the crust. Transfer dough to the dusted peel or baking sheet.

Assemble pizza

Brush the dough rim lightly with 1 tablespoon olive oil to promote browning. Spread the prepared spicy sauce evenly over the dough, leaving a 1/2–3/4 inch border. Evenly sprinkle about 1 3/4 cups of the shredded mozzarella over the sauce, reserving about 1/4 cup for finishing. Scatter the cooked crumbled sausage, chopped bacon, and diced ham evenly across the pizza. Add thinly sliced red onion if using. Top with the remaining 1/4 cup mozzarella so cheese covers toppings and helps bind them.

Bake

Slide the pizza onto the preheated stone or baking sheet and bake at 500°F (260°C) for 8–12 minutes, until the crust is golden and blistered and the cheese is bubbling and slightly browned. If oven is 425°F, bake 12–16 minutes and monitor closely. Rotate the pizza halfway through baking for even browning.

Finish & serve

Remove the pizza from the oven and let rest 2–3 minutes. Sprinkle chopped fresh parsley or basil over the top and add crushed red pepper to taste if desired. Slice into 6–8 slices and serve hot.
