Preheat and prepare dough
Preheat oven to 500°F (260°C). If using a pizza stone, place it in the oven before preheating. Lightly oil a baking sheet or prepare a pizza peel with cornmeal if using a stone. Stretch or roll the pizza dough to a 12-inch round (about 1/4-inch thick). Transfer the shaped dough to the prepared baking sheet or peel. Brush the dough lightly with 1 tablespoon olive oil, especially around the rim to encourage a golden crust.
Sauce & Dressing
If you want a slightly tangier Reuben-style sauce, stir 1 teaspoon Dijon mustard into 1 cup Thousand Island dressing. Taste and adjust. Spread an even layer of the Thousand Island mixture over the oiled dough, leaving a 1/2-inch border for the crust (about 3/4 to 1 cup of dressing total).

Cook the beef and onions
Heat a medium skillet over medium-high heat. Crumble 12 oz ground beef into the pan. Finely dice 1 small onion and add to the pan. Season with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. Cook, breaking up the meat, until browned and cooked through, about 6–8 minutes. Drain any excess fat and return the beef-onion mixture to the skillet to keep warm.
Assemble the pizza
Scatter the warm cooked beef and onion mixture evenly over the Thousand Island–coated dough. Distribute about 1 cup well-drained, roughly chopped sauerkraut across the pizza in an even layer. Tear or lay the 4 oz Swiss (or provolone) slices over the sauerkraut and beef so you have good coverage. Sprinkle 1 cup shredded mozzarella evenly on top of the Swiss and other toppings to help everything melt together.
Bake
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 500°F (260°C) until the crust is golden and cheese is bubbly and slightly browned, 8–12 minutes. Rotate halfway through baking for even color if necessary. Oven times vary—start checking at 8 minutes.
Finish & serve
Remove the pizza from the oven and let rest 2 minutes. If desired, drizzle a little extra Thousand Island dressing or serve extra dressing on the side for dipping. Sprinkle chopped fresh parsley (about 1 tbsp) over the pizza for color. Slice into 6–8 pieces and serve hot.
