If using a block of mozzarella, cut into 12 even sticks about 3/4 inch x 3–4 inches. If using string cheese, leave intact. Pat each stick dry with paper towel to remove surface moisture — this helps breading adhere and prevents excessive cheese leakage during frying. Place on a tray and freeze uncovered for 30–45 minutes until firm (not rock-hard).

Optional stronger adhesion: in a small bowl, stir cornstarch with 1 tbsp water to make a thin slurry. After dredging in flour, dip briefly in egg, then brush a thin coat of cornstarch slurry before applying breadcrumbs.
Coating the mozzarella
Working with 2–3 sticks at a time, dredge each frozen mozzarella stick in the seasoned flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Press into the breadcrumb mixture, coating thoroughly and pressing the crumbs to adhere. For an extra-secure crust, return the coated sticks to the egg bowl for a second egg dip, then a second breadcrumb coating. Place coated sticks on a baking sheet lined with parchment and freeze for at least 30 minutes (preferably 1 hour) to firm up the coating and reduce cheese escape during frying.
Frying (or baking alternative)
Deep-frying
Heat oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C). Use enough oil so sticks can float without touching the bottom. Fry 3–4 coated sticks at a time (do not overcrowd) for 1 to 1 1/2 minutes, turning gently so they brown evenly — remove as soon as golden brown. Transfer to a wire rack or paper-towel-lined plate to drain. Fry remaining batches, letting oil return to temperature between batches.
Bake (oil-free option)
Preheat oven to 425°F (220°C). Place frozen coated sticks on a parchment-lined baking sheet and spray lightly with cooking oil. Bake 8–10 minutes, flip, then bake another 6–8 minutes until golden and crusty. Baking results are less uniformly golden and the cheese may ooze sooner than frying; keep an eye to avoid bursting.

Make-ahead & safety notes
Coated sticks can be frozen in a single layer on a tray, then transferred to a zip-top bag for up to 1 month. Fry from frozen, adding 30–60 seconds to cooking time. Do not thaw before frying — thawing increases the chance of cheese leaking. Use a thermometer when deep-frying to maintain oil temperature and avoid overly greasy sticks.
