Preheat and prepare
Position an oven rack in the upper third of the oven and preheat to 500°F (260°C) for at least 30 minutes. If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil it and dust with flour.
On a lightly floured surface, stretch or roll the dough into a 12-inch round (or desired size). Transfer dough to a floured pizza peel or the prepared baking sheet. Brush the outer 1/2-inch crust lightly with olive oil to promote browning.
Sauce
Combine tomato pizza sauce, minced garlic, oregano, crushed red pepper flakes, and salt in a small bowl. Stir to combine and taste; adjust seasoning as needed.
Spread the sauce evenly over the stretched dough, leaving a 1/2-inch border for the crust. Use about 3/4 to 1 cup of sauce depending on how saucy you like the pizza.

Cook and prepare meats
Heat a skillet over medium heat. Add the crumbled Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes. Drain any excess fat on a paper towel.
In the same skillet, if needed, quickly sear the Canadian bacon slices for 30–60 seconds per side just to warm and lightly brown them. Remove and slice into bite-size pieces if desired.
Cook bacon until crisp (in skillet or oven on a rack at 400°F/200°C for 12–15 minutes). Drain on paper towels and roughly chop into bite-size pieces.
Have pepperoni slices ready. No cooking required; they will crisp on the pizza while baking.
Distribute the cooked sausage evenly over the sauce, then add Canadian bacon pieces, chopped bacon, and arrange pepperoni slices across the surface.
Cheeses & finishing
Evenly sprinkle the shredded mozzarella over the meats, followed by the shredded sharp cheddar. Try to leave a little of the crust edge exposed so it browns well. Lightly grind black pepper over the cheese. If using, sprinkle grated Parmesan.
Carefully slide the assembled pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is golden and cheese is bubbling and beginning to brown. Oven times vary—watch closely after 7 minutes.
Remove pizza from the oven and let rest for 2–3 minutes. Garnish with fresh basil leaves if desired. Slice into 8 pieces and serve immediately.
