Prepare filling

In a medium bowl, combine softened cream cheese (8 oz) and shredded sharp cheddar (1 cup). Mix with a spatula until smooth and homogenous.

Add crumbled cooked bacon (6 slices), finely chopped cilantro (2 tbsp), garlic powder (1 tsp), onion powder (1 tsp), salt (1 tsp), and black pepper (1/2 tsp). Stir thoroughly until evenly distributed. Taste and adjust seasoning if desired. Transfer filling to a piping bag or cover bowl and refrigerate for 15–20 minutes to firm up slightly for easier stuffing.

Prepare peppers

Wearing gloves, wash and dry 12 large jalapeños. Slice each pepper lengthwise in half and use a small spoon to remove seeds and membranes (remove more if you want milder poppers). Rinse hands and tools if touched seeds. Pat pepper halves dry with paper towels.

Optional: For milder heat, place cored halves in a bowl of cold water for 10 minutes, then drain and pat dry before stuffing.

Using the chilled filling, spoon or pipe approximately 1 to 1 1/2 tablespoons of filling into each jalapeño half, smoothing the surface so it is slightly mounded but not overflowing.

Set up breading station

Place flour (1 cup) in a shallow bowl. In a second shallow bowl, whisk together 2 whole eggs and 2 tablespoons milk until blended. In a third bowl, combine panko breadcrumbs (1 1/2 cups), paprika (1 tsp), salt (1/2 tsp) and black pepper (1/4 tsp).

One by one, dredge each stuffed jalapeño half in flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the panko mixture to coat thoroughly. For an extra-crispy double coat, return the panko-coated popper to the egg wash and again into the panko. Place finished poppers on a baking sheet lined with parchment and chill for 10 minutes to help the breading adhere.

Heat oil

Pour about 2 to 3 cups neutral oil into a heavy skillet or Dutch oven to reach approximately 1 to 1 1/2 inches depth (about 3 cups for a 10-inch pan). Heat oil over medium-high until it reaches 350°F (175°C). If you do not have a thermometer, test by dropping a small breadcrumb into the oil — it should sizzle steadily and brown in about 45–60 seconds.

Fry in batches: Carefully add breaded jalapeño poppers seam-side down, without overcrowding the pan. Fry for 2 to 3 minutes per side, turning gently with tongs, until golden brown and crisp. Maintain oil temperature between 325–350°F; reduce heat slightly if browning too fast.

Using a slotted spoon or tongs, transfer cooked poppers to a wire rack set over a baking sheet or paper towels to drain. Keep warm in a 200°F (95°C) oven if cooking in multiple batches.

Serve hot with lime wedges and a sprinkle of fresh cilantro leaves if desired.
