Dough & base
Preheat and prepare
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating. Lightly flour a work surface and have your dough at room temperature so it stretches easily.
Stretch or roll the dough into a 12-inch (30 cm) round on a floured surface to about 1/4-inch thickness. Transfer the shaped dough to a piece of parchment paper or a lightly oiled pizza peel. Brush the edge/crust lightly with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon salt.
Sauce
Season the sauce
In a small bowl, combine 3/4 cup tomato sauce, 1 minced garlic clove, 1/2 teaspoon dried oregano and 1/8 teaspoon crushed red pepper (if using). Stir to combine and taste; adjust salt if needed. Spread an even layer of the seasoned sauce over the dough, leaving a 1/2-inch border for the crust.
Cheeses & toppings
Add cheeses
Scatter 1 cup shredded or thinly sliced fresh mozzarella evenly over the sauced dough. Sprinkle 1/2 cup shredded sharp cheddar on top of the mozzarella to add flavor and color contrast.
Arrange toppings
Distribute 6 oz sliced or diced Canadian bacon evenly across the pizza. Arrange 3/4 cup pineapple rings or chunks across the surface so each slice will have some pineapple. Lightly season the toppings with 1/8 teaspoon black pepper.
Bake & finish
Bake
Using parchment or a floured peel, transfer the pizza onto the preheated stone or oven rack. Bake at 475°F (245°C) for 10–12 minutes, or until the crust is golden and the cheese is bubbling and starting to brown in spots. If your oven runs hot, start checking at 8 minutes.
Finish and rest
Remove the pizza from the oven and let it rest for 2–3 minutes. Sprinkle 2 teaspoons grated Parmesan and 1/4 teaspoon red pepper flakes over the top if desired. Tear and scatter fresh basil leaves over the pizza just before slicing.
Slice into 8 slices and serve hot.
