Preheat and prepare bread
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it. Using a serrated knife, slice the baguette in half lengthwise to create two long halves. If you prefer individual servings, cut the baguette into 1–1.5 inch (2.5–4 cm) slices but keep them connected at the base (for pull-apart) or separate for slices.
Combine the softened unsalted butter and olive oil in a small bowl until smooth. The olive oil keeps the butter spreadable and helps crisp the edges.

Make the garlic-herb butter
Add the minced garlic, chopped parsley, chopped chives (if using), dried oregano, salt, black pepper, and lemon zest (if using) to the butter-oil mixture. Mix thoroughly so the garlic and herbs are evenly distributed. Taste a tiny smear and adjust salt or garlic to preference.
Assembling & Cheese

Evenly spread the garlic-herb butter over the cut surfaces of the baguette halves (or on each individual slice). If using the soft cheese (goat or cream cheese), dot or thinly smear it over the butter first in small amounts to create pockets of creaminess. Sprinkle the shredded mozzarella evenly over the top, then follow with the grated Parmesan. If using red pepper flakes, sprinkle a light dusting over the cheese for heat.
If you want extra crispness beneath the cheese, place the prepared halves on the baking sheet with the cut side up on the rack below the top third of the oven.

Bake until melted and golden
Bake in the preheated oven for 10–14 minutes, until the cheese is fully melted and edges of the bread are golden. For a bubbly, browned top, switch the oven to broil for 1–2 minutes—watch closely to avoid burning.
Remove from oven and let rest for 2–3 minutes. Sprinkle the chopped fresh parsley over the top for color and freshness. Slice into serving pieces if you baked whole halves.
Serve warm as a starter. Provide a small bowl for napkins or a plate, as the melted cheese can be gooey. Leftovers can be reheated in a 350°F (175°C) oven for 6–8 minutes to restore crispness.
