Preheat and prepare dough
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil it. Lightly dust a work surface with flour and stretch or roll the pizza dough to a 12-inch round (or desired shape/thickness). Transfer dough to a piece of parchment paper or the prepared baking sheet.
Make buffalo chicken
Combine chicken and sauce
In a medium bowl, melt 2 tbs unsalted butter (microwave ~20–30 seconds or in a small saucepan). Stir in 4 tbs buffalo sauce and 1 tsp honey (if using) until combined. Add shredded cooked chicken, 1/2 tsp salt, and 1/4 tsp black pepper. Toss until chicken is evenly coated with the buffalo mixture.
Assemble pizza
Evenly sprinkle 1.5 cups of shredded mozzarella over the prepared dough, leaving the crust border. Spread the buffalo-coated chicken across the cheese in an even layer.
Scatter the remaining 0.5 cup mozzarella in spots for extra melty pockets, then sprinkle 1/2 cup crumbled blue cheese and 1/4 cup thinly sliced red onion evenly over the top.
Bake
Slide the pizza (on parchment) onto the preheated pizza stone or place the baking sheet in the oven. Bake for 10–14 minutes, or until the crust is golden and cheese is bubbling and beginning to brown in spots. Baking time depends on oven and dough thickness—check at 8 minutes and monitor closely.
If you want a blistered top, switch to broil for 30–60 seconds at the end—watch carefully to avoid burning.
Finish & serve
Remove pizza from oven and let rest 2–3 minutes. Sprinkle with chopped green onions and optional cilantro or parsley. Drizzle or serve with 1/2 cup ranch or blue cheese dressing for dipping or to drizzle on slices. Add extra hot sauce at the table if desired.
