preheat

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats. If using a baking sheet, lightly oil it or line with parchment.

prepare dough

On a lightly floured surface, stretch or roll the pizza dough to a roughly 12-inch round (or desired size). Transfer to a pizza peel or prepared baking sheet. Brush the dough evenly with 1 tablespoon olive oil mixed with minced garlic, leaving a 1/2-inch rim for a crust.

Evenly sprinkle 1 1/2 cups shredded mozzarella over the oiled dough, leaving the rim. Scatter 3/4 cup shredded sharp cheddar over the mozzarella to create a balanced, melty base.

Preheat a skillet over medium heat. Add bacon strips and cook until crisp, about 6–10 minutes, turning as needed. Transfer cooked bacon to a paper-towel-lined plate to drain, then roughly chop or break into bite-sized pieces.

slice tomatoes

While bacon cooks, slice the 2 medium tomatoes into 1/4-inch thick rounds. If tomatoes are very juicy, blot slices lightly with paper towel to remove excess moisture.

Scatter the chopped bacon and tomato slices evenly over the cheese layer, leaving space around the edge for the crust.

Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake 10–12 minutes, or until crust is golden and cheese is bubbly and beginning to brown. Rotate halfway through baking for even coloring if necessary.

Finish & garnish

While the pizza bakes, make the mayo dressing: in a small bowl combine 1/2 cup mayonnaise, 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk until smooth. Taste and add optional 1/4 teaspoon red pepper flakes if you want a little heat.

When the pizza is done, remove it from the oven and let rest 2 minutes. Drizzle or lightly dollop the mayonnaise dressing over the hot pizza (you can warm the mayo slightly if you prefer a thinner drizzle).

Top with the 2 cups thinly sliced romaine or iceberg lettuce, distributing it evenly so it wilts slightly from the heat but remains crisp. If desired, add a few extra crumbled bacon pieces on top.

Slice the pizza into 6–8 pieces and serve immediately.
