Preheat and prepare dough
Preheat oven to 500°F (260°C) with a pizza stone or heavy baking sheet on the middle rack. On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round. Transfer to a piece of parchment for easy handling. Brush dough lightly with 1 tablespoon olive oil mixed with minced garlic and 1 tsp salt, leaving a 1/2-inch rim for crust.
Sauce
Make the BLT-style sauce by whisking together the mayonnaise, Dijon mustard, lemon juice and 1/4 tsp black pepper until smooth. Spread an even layer (about 2–3 tbs) of this sauce over the oiled dough, leaving the crust exposed.

Cook bacon
In a skillet over medium heat, cook the 6 bacon strips until crisp, about 8–10 minutes, turning as needed. Transfer to paper towels and drain. Once cool, chop into 1/2-inch pieces.
Prepare Canadian bacon
Quickly sear or warm the Canadian bacon slices in the same skillet for 30–60 seconds per side just to render a little and warm through. Pat slightly dry.
Scatter half of the shredded mozzarella evenly over the sauced dough. Arrange the Canadian bacon slices across the pizza, then sprinkle the chopped crispy bacon over the top. Finish by sprinkling the remaining mozzarella and all of the shredded cheddar evenly, creating a balanced cheese layer.
Bake
Bake pizza
Slide the pizza (on parchment) onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, rotating once midway, until crust is golden and cheese is bubbly and beginning to brown.
Toppings (fresh, finish)
Remove pizza from oven and transfer to a cutting board. Let rest 2 minutes. While still warm, evenly top the pizza with the shredded lettuce, chopped tomato (drained of excess juice), and finely chopped jalapeño. Sprinkle the optional chopped parsley or chives for brightness.
Finishing
Drizzle the finished pizza lightly with 1 tsp olive oil, and season the fresh toppings with salt and black pepper to taste. Let rest another minute so lettuce wilts slightly but remains crisp.
Slice into 8 slices and serve immediately.
