Chill glass
Place an old-fashioned or rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink so it is nicely chilled.
Combine ingredients
In a cocktail shaker, add ice (about 1 cup), 2 oz bourbon, 1 oz coffee liqueur, 0.5 oz vanilla liqueur (or a quarter teaspoon vanilla), 0.5 oz cold espresso, 0.25 oz simple syrup, and 2 dashes chocolate bitters if using.
Shake
Shake vigorously for 12–15 seconds to both chill and slightly aerate the cream components so the drink becomes silky.
Add cream and double-shake (optional)
If using half-and-half, add 1 oz to the shaker and gently shake 6–8 seconds more (or if you prefer a layered look, strain the shaken spirit base into the chilled glass with fresh ice and float the cream on top).
Strain and serve
Strain the cocktail into the chilled rocks glass over one large ice cube or fresh ice.
Garnish
Lightly grate nutmeg or dust cocoa powder over the top (about 1/4 teaspoon). Add two coffee beans on top for aroma if desired.
