Potatoes & Vegetables
Par-cook potatoes
Place the cut potatoes in a medium saucepan and cover with cold water by 1 inch. Add a pinch (about 1/4 tsp) of salt. Bring to a simmer and cook for 8–10 minutes until just tender when pierced with a fork but not falling apart. Drain well and let steam-dry in the colander 2 minutes.
Prep vegetables
While potatoes cook, thinly slice the yellow onion into half-moons, core and seed the bell peppers and cut into 1/2-inch strips, and mince the garlic cloves.
Sear veggies
In a large skillet (10–12 inches) over medium-high heat, add 1 tablespoon olive oil and the butter. When butter is melted and foaming, add the par-cooked potatoes cut side down in a single layer. Cook undisturbed 3–4 minutes until golden-brown on the bottoms.
Add onion & peppers
Stir the potatoes, then push to one side of the pan and add the remaining 1 tablespoon olive oil. Add the sliced onion and bell pepper strips to the empty side and cook 4–5 minutes, stirring occasionally, until softened and starting to caramelize. Mix the potatoes and vegetables together in the pan.
Add garlic & seasonings
Reduce heat to medium. Add the minced garlic, smoked paprika, dried oregano, salt, and black pepper. Stir and cook 1–2 minutes until fragrant and garlic is softened, making sure potatoes get evenly coated with seasoning. Taste and adjust salt/pepper as needed.
Cheese & Garnish
Melt cheese
Sprinkle the shredded sharp cheddar evenly over the potato and vegetable mixture. Cover the skillet with a lid (or a large sheet pan) and cook over low heat 2–3 minutes until cheese is melted. If you prefer a lightly crisped top, place the skillet under a broiler for 1–2 minutes—watch closely to avoid burning. If using broiler, transfer to an oven-safe skillet first.
Finish & serve
Remove from heat. If using, sprinkle grated Parmesan over the top. Garnish with thinly sliced chives. Serve hot as a side or shareable appetizer.
