Prepare dry ingredients

In a large bowl whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, baking soda, fine sea salt, ground cinnamon and ground nutmeg until evenly combined.

Combine wet ingredients

In a separate bowl whisk the whole milk, eggs, melted cooled butter and vanilla extract until smooth. If batter seems very stiff later, use up to the optional 2 tablespoons of apple cider or water to loosen.

Make batter

Pour the wet ingredients into the dry ingredients and stir gently just until combined. The batter should be thick but spoonable — small lumps are fine. Do not overmix. Cover and let rest 10 minutes while you prepare the apples and swirl.

Cook apples

Heat a medium skillet over medium heat and add 1 tablespoon unsalted butter. Add the diced green apples, 2 tablespoons granulated sugar, 1 teaspoon lemon juice and 1/2 teaspoon ground cinnamon. Sauté, stirring, until apples are softened but still hold shape, about 4–6 minutes. Turn heat off and allow to cool to room temperature.

Fold apples into batter

When apples are cool, gently fold them into the rested batter so they are evenly distributed. Reserve any juices from the pan but discard excessive liquid; the filling should not be watery.

Hickory-Scented Swirl

Make the swirl paste

In a small bowl mash together the softened unsalted butter, 1/4 cup light brown sugar, 1 teaspoon ground cinnamon, the hickory smoke powder or liquid hickory smoke (use sparingly and taste), and a pinch of salt until a spreadable paste forms.

Incorporate swirls

Transfer batter to a wide shallow container or bowl. Using a small spoon or piping bag, place dollops of the hickory swirl paste onto the surface of the batter and gently fold/swirL twice — enough to create marbled swirls throughout but not to fully mix. This creates spiced, smoky ribbons in the fritters.

Finish & Frying

Heat oil

Pour neutral oil into a heavy-bottomed pot or deep fryer so there is at least 2–3 inches of oil (about 4–6 cups depending on pot). Heat oil to 350°F (175°C). If you do not have a thermometer, test with a small drop of batter — it should sizzle and rise slowly to the surface.

Fry fritters

Working in batches (3–4 fritters at a time depending on pot size), drop generous spoonfuls (about 3 tablespoons) of batter into the hot oil using two spoons or a small ice cream scoop. Fry until deep golden brown, about 2–3 minutes per side, turning once with a slotted spoon or spider to ensure even coloring. Maintain oil temperature around 350°F; adjust heat as needed. Remove fritters to a wire rack set over a baking sheet to drain and keep warm.

Make glaze

While fritters fry, whisk together the powdered sugar, 3 tablespoons milk or water and 1/2 teaspoon vanilla extract until smooth. Adjust thickness with small additional teaspoons of liquid if needed — glaze should be pourable but thick.

Finish and serve

When fritters are slightly cooled but still warm, either dust with powdered sugar or dip the tops into the glaze and return to the rack to set for a minute. Serve warm so you get the spiced apple pockets and hickory-scented swirls at their best.
