Dough (Cornmeal flour fried pockets)

    Make and rest the dough

    In a large mixing bowl combine 2 cups cornmeal (masa harina or fine corn flour), 1 cup all-purpose flour, 1 tsp baking powder and 1 tsp salt. Whisk to distribute. Make a well in the center and add 1 cup warm water, 1/2 cup plain yogurt (or buttermilk) and 2 tbsp vegetable oil. Mix with a spoon until a shaggy dough forms, then knead in the bowl or on a lightly floured surface for 3–4 minutes until smooth and elastic. If dough feels too dry, add up to 2 tbsp more water; if too sticky, dust with a little extra all-purpose flour. Cover the dough with a damp cloth or plastic wrap and let rest at room temperature for 20–30 minutes — resting hydrates the cornmeal and makes the dough pliable.

    Shape pockets

    Divide the rested dough into 10 equal pieces (about 60–70 g each for 6–8 servings; adjust if you want larger pockets). Roll each piece into a smooth ball and flatten slightly. On a lightly floured surface, roll each ball into a 4–5 inch (10–12 cm) circle about 1/8 inch thick. If the edges crack, press and smooth them gently with moistened fingers. Keep rolled circles covered with a clean towel while you prepare filling to prevent drying.

    Heat oil and fry

    Pour about 2 cups vegetable oil into a heavy skillet or saucepan to a depth of about 1/2 inch (enough to shallow-fry). Heat over medium-high until shimmering and a small piece of dough sizzles immediately but does not burn (about 350°F / 175°C). Working in batches, spoon about 2–3 tbsp of filling onto the center of a dough circle, fold over to form a half-moon (or fold edges toward center to make a sealed pocket), then press the edges firmly and crimp with a fork to seal. For a stronger seal, lightly brush the edge with water before pressing. Carefully slide pocket into hot oil. Fry 1–2 minutes per side, turning once, until golden brown and crisp — adjust heat so they brown evenly without burning (total 3–4 minutes per pocket). Transfer to a paper towel–lined tray to drain. Repeat with remaining dough and filling. Keep cooked pockets warm in a low oven (200°F / 95°C) while finishing remaining batches.

Filling — Spiced Mixed Vegetables & Cheese

    Prepare vegetables

    Prepare all vegetables before you start: finely chop the onion, mince the garlic, dice carrot, bell pepper and potato (if using), and thaw peas and corn if frozen. A uniform small dice helps the filling cook quickly and evenly.

    Cook the filling

    Heat 2 tbsp olive oil in a medium skillet over medium heat. Add the chopped onion and sauté 4–5 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant. Add diced carrot and potato, cook 4–5 minutes stirring occasionally until they begin to soften. Stir in bell pepper, peas and corn and cook another 3–4 minutes until vegetables are tender but still hold shape. Sprinkle in 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp ground coriander, 1/4 tsp red chili flakes, 1 tsp salt and 1/2 tsp black pepper. Stir to coat and cook 1–2 minutes to bloom the spices.

    Finish filling

    Remove the skillet from heat and stir in 1 cup grated cheddar (or pepper jack / crumbled paneer) while the filling is still hot so the cheese softens and binds the mixture. Add 1 tbsp lime or lemon juice and 1/4 cup chopped fresh cilantro. Taste and adjust seasoning. If filling seems loose or wet, let it cool slightly so it firms up before spooning into dough; for a firmer filling you can cool it in the refrigerator for 15–20 minutes.

Optional Dips / Garnish

    Serve pockets hot with optional dips: spoon yogurt or sour cream into a small bowl and stir in a pinch of salt and chopped cilantro; serve salsa on the side. Garnish plates with extra cilantro leaves.
