Prep and roast

    Prepare ingredients

    Wash and dry the fresh chiles and vegetables. Remove stems from chiles and roughly chop them (leave seeds if you want more heat). Peel and roughly chop onion and carrots; leave garlic whole or halved depending on clove size.

    Roast for flavor

    Heat a large skillet or cast-iron pan over medium-high heat until hot. Add the neutral oil. Working in batches if needed, place chopped chiles, onion, carrots, and garlic in the pan and cook, stirring occasionally, until they develop charred spots and soften (6–8 minutes). The chiles should blister and onions should be translucent. Alternatively, you can roast under a broiler for 8–10 minutes, turning once.

    Simmer with liquids

    Transfer the roasted vegetables and chiles to a medium saucepan. Add the dried arbol chiles (if using), vinegar, water, kosher salt, sugar (or honey), ground cumin, and smoked paprika. Bring to a gentle simmer over medium heat, then reduce heat and simmer uncovered for 10 minutes to meld flavors and soften everything completely.

    Cool slightly and blend

    Remove the pan from heat and let the mixture cool for 5 minutes. Transfer the contents to a high-speed blender (reserve any cooking liquid). Add fresh lime juice. Blend on high until very smooth, about 1–2 minutes. If the sauce is too thick, add up to the reserved cooking liquid or extra water 1 tablespoon at a time to reach desired consistency.

    Optional strain for silky texture

    For a smooth restaurant-style sauce, pour the blended mixture through a fine-mesh sieve into a bowl, pressing solids with a spatula to extract as much liquid as possible. Discard solids left in the sieve, or save for another use.

    Adjust seasoning

    Taste the strained sauce and adjust acidity, salt, and sweetness: add additional vinegar (up to 1 tablespoon more) for brightness, more salt to taste, or a touch more sugar/honey to balance. If you like herbal notes, stir in chopped cilantro now.

    Bottle and store

    Pour the finished hot sauce into a sterilized jar or bottle. Let cool to room temperature, then refrigerate. The flavors will meld and mellow after 24–48 hours. Sauce will keep refrigerated for up to 4–6 weeks.
