Soak & Rinse

Quick soak (preferred for time)
Rinse 2 cups dried black beans in a colander under cold water, removing any debris. Transfer beans to a large pot and add 6 cups water. Bring to a vigorous boil for 2 minutes, then remove from heat, cover, and let sit 1 hour. Drain and rinse beans before proceeding.

Overnight soak (optional)
Alternatively, cover rinsed beans with 6 cups cold water in a bowl and refrigerate 6–8 hours or overnight. Drain and rinse before cooking.
Sauté Aromatics

Peel and finely dice 1 yellow onion. Peel and mince 4 garlic cloves. Heat 2 tbsp olive oil in a large heavy pot or Dutch oven over medium heat until shimmering. Add diced onion and a pinch of salt; sauté 6–8 minutes until soft and translucent. Add minced garlic, 1 tsp ground cumin, and 1 tsp smoked paprika; cook 30–45 seconds until fragrant, stirring constantly to avoid burning.
Simmer Beans

Add the drained beans to the pot with the aromatics. Pour in 6 cups fresh water and add 1 whole bay leaf. Bring to a gentle boil, then reduce heat to maintain a low simmer (bare bubbles) and partially cover the pot. Simmer for 60–90 minutes, stirring every 15 minutes and checking liquid — add up to 1 cup extra hot water if beans look dry. Begin checking for doneness at 60 minutes; beans should be tender but not mushy.

About 15 minutes before the beans are done, season with 2 tsp kosher salt and 1 tsp black pepper. Continue to simmer until beans reach desired tenderness. Remove and discard the bay leaf.

Turn off the heat and stir in 1 tbsp apple cider vinegar to brighten flavors. Taste and adjust seasoning with more salt, pepper, or a pinch of cumin or smoked paprika if needed. If you prefer a thicker cooking liquid, mash about 1/2 cup of the beans against the side of the pot with a spoon and stir to incorporate.

Ladle beans into serving pans for the hot bar. Sprinkle with 2 tbsp chopped fresh cilantro if using and provide lime wedges on the side. Beans can be kept warm at 140°F (60°C) in a steam table; if they thicken while holding, stir in a few tablespoons of hot water to loosen before serving.
