Preparation
Make the Crust
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Allow to cool.
Prepare the Filling
In another mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, sea buckthorn puree, and vanilla extract, mixing until well incorporated. Gently fold in the whipped cream until the mixture is light and fluffy.
Assemble the Dessert
Pour the filling over the cooled crust and spread evenly. Refrigerate for at least 4 hours, or until set.
Serving
Serve and Garnish
Once set, remove the dessert from the springform pan. Top with fresh sea buckthorn berries or additional puree and garnish with mint leaves. Slice and serve chilled.
