Prep shrimp

Pat the shrimp dry with paper towels. If tails are on and you prefer them off, remove tails; otherwise leave tails for presentation. Place shrimp in a medium bowl.

Add buttermilk, minced garlic, 1 tbsp hot sauce, 1 tsp kosher salt and 1/2 tsp black pepper to the bowl. Stir to combine and ensure shrimp are evenly coated. Cover and refrigerate for 20–30 minutes (up to 1 hour) to tenderize and infuse flavor.

Breading

While shrimp marinate, combine flour, cornstarch, paprika, garlic powder, onion powder, cayenne, 3/4 tsp kosher salt and 1/2 tsp black pepper in a shallow bowl or rimmed plate. Whisk to distribute spices evenly.

Set up a dredging station: marinated shrimp in one bowl (allow excess buttermilk to drip off), the seasoned flour in the next. Arrange a wire rack over a baking sheet to hold breaded shrimp before frying.

Frying

Pour oil into a heavy-bottomed pot or deep fryer to a depth of 2–3 inches (about 3–4 cups depending on your vessel). Heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a pinch of flour into the oil— it should sizzle immediately and brown slowly.

Working in batches to avoid crowding, dredge each shrimp in the seasoned flour, pressing gently so the coating adheres. Shake off excess and place on the prepared rack. Fry 6–8 shrimp per batch (depending on pot size) for 2–3 minutes until golden brown and cooked through. Internal shrimp temperature should reach 120–130°F and flesh should be opaque and firm.

Use a slotted spoon to transfer fried shrimp to a paper towel–lined tray or into a warm oven (200°F / 95°C) on a rack to keep crisp while you finish remaining shrimp.

Firecracker Sauce

While the shrimp fry, whisk together 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 1.5 tbsp sriracha, 1 tbsp honey, 1 tsp rice vinegar, 1/2 tsp soy sauce, 1/4 tsp sesame oil, 1 tsp lime zest and 1 tsp lime juice in a small bowl until smooth.

Stir in 1 tbsp thinly sliced green onions. Taste and adjust: add more sriracha for heat, more honey for sweetness, or a pinch of salt if needed. Keep refrigerated until ready to toss with shrimp.

Assembling the Platter

Place shredded cabbage or mixed greens in the center of a large serving platter to create a bed. Arrange fried shrimp over the greens attractively.

Drizzle enough firecracker sauce over the shrimp to coat lightly (about half the sauce) and toss gently on the platter so shrimp are glazed but not soggy. Serve remaining sauce on the side for dipping.

Garnish with toasted sesame seeds, remaining sliced green onions, chopped cilantro and pickled jalapeños (if using). Arrange lime wedges around the platter for squeezing at the table.

Serve immediately so shrimp remain crisp, with extra sauce on the side and warm napkins. Recommend serving with steamed rice or tortillas, and a cold beer or crisp white wine.
