Preparation and Cooking

Prepare the Fries

Wash and peel the potatoes. Cut them into uniform fries, about 1/4 inch thick. Rinse them in cold water to remove excess starch and then pat them dry with a kitchen towel.

Fry the Potatoes

In a large pot, heat oil to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt while still hot.

Prepare the Steak

Take the bavette steak out of the fridge and let it come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

Cook the Steak

In a large skillet or grill pan, heat olive oil over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

Make Finishing Butter

In a small bowl, combine softened butter with minced garlic and chopped fresh herbs. Mix until well combined.

Rest the Steak

Remove the steak from the heat and let it rest for 5-10 minutes before slicing. Top with finishing butter just before serving.

Serve

Slice the steak against the grain and serve alongside the crispy fries. Enjoy!
