Prepare the Chips

Slice the russet potatoes into thin rounds. Rinse in cold water and pat dry. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy. Remove the chips from the oil and drain on paper towels. Season with salt.

Make the Nacho Cheese

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add the milk, whisking continuously until smooth. Add the cheddar cheese and jalapeño juice, stirring until the cheese is melted and the sauce is creamy.

Prepare the Creamy Slaw

In a large bowl, combine the shredded green cabbage and carrots. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, and salt. Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate until ready to serve.

Assemble the Loaded Chips

On a large platter, layer the house-made chips. Pour the nacho cheese over the chips, followed by a generous portion of creamy slaw, jalapeños, and green onions. Drizzle Alabama Twang Sauce and Dreamland BBQ Sauce on top. Finish with your choice of boneless rib tips, pork, chicken, or sausage.
