Sausage Patties

Make and shape patties

In a bowl combine ground pork, breadcrumbs, salt, pepper, and sage. Mix gently until just combined. Divide into 4 equal portions and shape into 3/4-inch thick patties slightly larger than your buns (they will shrink while cooking).

Cook patties

Heat a large skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil. When hot, add patties and cook 3–4 minutes per side until an internal temperature of 160°F (71°C) is reached and a brown crust forms. Transfer to a warm plate and keep warm.

Bacon

While the patties cook, fry or bake the bacon until crisp. For skillet: cook over medium heat 3–5 minutes per side until crisp. For oven: arrange on a baking sheet and bake at 400°F (200°C) for 12–15 minutes. Drain on paper towels and keep warm.

Onion Jam

Caramelize onions

Melt butter with 1 teaspoon olive oil in a medium skillet over medium-low heat. Add the thinly sliced onion and a pinch of salt. Cook slowly, stirring occasionally, until soft and translucent, about 12–15 minutes.

Finish jam

Increase heat to medium, add brown sugar, balsamic vinegar, soy sauce, and black pepper. Stir and cook another 3–5 minutes until the mixture is thick and jammy. If it becomes too dry, add 1 tablespoon water. Taste and adjust salt/pepper. Remove from heat and keep warm.

Eggs & Cheese

Fry eggs

Heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Crack eggs into the skillet and cook until whites are set but yolks remain runny, about 3–4 minutes for sunny-side up. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. For over-easy, flip gently and cook 20–30 seconds more.

Melt cheese on patties

When sausage patties are nearly done, place a slice of white cheddar on each patty and cover the skillet or tent with foil for 30–60 seconds to melt the cheese.

Buns & Assembly

Toast buns

Butter the cut sides of the English muffins or brioche buns lightly. Toast on a skillet or in a toaster oven over medium heat until golden, about 1–2 minutes.

Assemble sandwiches

Spread about 1 tablespoon Table sauce on each bottom bun. Place a sausage patty with melted cheddar on the sauce, add one fried egg, then two slices of crisp bacon, and top with about 1 tablespoon onion jam. Finish with the top bun. Garnish with chopped chives or parsley if desired.

Sides & Service

French fries: Cook according to package instructions or fry until golden and crisp. Toss with a pinch of salt and serve alongside the sandwich with extra Table sauce for dipping.

Side salad: Toss mixed salad greens, tomato, and cucumber with 2 tablespoons vinaigrette and serve alongside the sandwich.
