Method

Preparation

Chill glass

Place an Old Fashioned (rocks) glass in the freezer for 5–10 minutes or fill it with ice and water to chill while you prepare the cocktail.

Measure ingredients

Measure 2 oz Scotch, 0.25 oz demerara syrup, and have 2 dashes of Angostura bitters ready.

Mixing

Combine in mixing glass

Add 2 oz Scotch, 0.25 oz demerara syrup, and 2 dashes Angostura bitters to a mixing glass or shaker filled with plenty of ice.

Stir

Stir the mixture gently for 20–30 seconds until well chilled and properly diluted (the glass should feel cold, and the ice edges will be slightly frosted).

Finish & Serve

Prepare glass

Discard the ice or water from the chilled Old Fashioned glass. Place one large ice cube into the glass.

Strain

Strain the stirred Scotch mixture over the large ice cube into the chilled glass.

Express orange oil & garnish

Hold an orange peel over the drink and give it a firm twist to express the oils across the surface, then rub the peel around the rim and drop it into the glass as garnish.

Serve

Serve immediately. Optionally provide a small cocktail spoon or stirrer so the drinker can re-stir as the ice slowly dilutes the drink.
