Make the berry purée

Place raspberries and blueberries in a blender or food processor with the lemon juice and simple syrup. Pulse until smooth, about 15–20 seconds. If you prefer a smoother liquid, strain the purée through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and solids.

Fill a large pitcher halfway with ice cubes. Pour the strained berry purée into the pitcher. Add the sparkling water and gently stir to combine. Taste and adjust sweetness with more simple syrup if desired.

Pour into four tall glasses over ice, dividing evenly. Garnish each glass with a lemon slice and a mint sprig. Serve immediately so the bubbles remain lively.

Ginger Pineapple Fizz (serves 4)

Combine chilled pineapple juice, fresh lime juice, and ginger syrup in a pitcher. Stir well to mix flavors. If using ginger beer in place of ginger syrup, reduce added club soda to keep carbonation balanced.

Add crushed ice to the pitcher or divide crushed ice among four glasses. Pour the pineapple-lime-ginger mixture over the ice, filling each glass about two-thirds full.

Top each serving with cold club soda or sparkling water and stir gently once to combine. Garnish with a lime wheel and a piece of candied ginger if using. Serve immediately.
