Method

Prepare the honey-lime

Make honey syrup for easy mixing

Add 0.5 tablespoon local honey and 0.25 oz cold water into a small cocktail shaker or a jar. Stir or shake vigorously for 10–15 seconds until the honey is thinned and pourable. This prevents the honey from clumping when it hits the cold ginger beer.

Add 0.75 oz freshly squeezed lime juice to the honey mixture. Shake or stir again until combined and slightly frothy, about 5–10 seconds.

Assemble the Jr. Mule

Fill your highball glass or copper mug with about 1 cup of ice cubes to chill the glass and keep the drink cold.

Strain the honey-lime mixture over the ice. If you used a jar, pour carefully to keep ice from falling out.

Slowly pour 8 oz cold ginger beer into the glass over the back of a spoon or directly—pour gently to preserve carbonation.

Give the drink a single gentle stir with a bar spoon to incorporate the honey-lime and ginger beer without losing too much fizz (3–4 gentle turns).

Garnish with a fresh lime wheel or wedge on the rim and optionally a sprig of mint tucked beside the ice for aroma. Serve immediately.

Notes & Variations

If you prefer sweeter, add another 0.25 tbs honey (increase total to 0.75 tbs). For more tartness, increase lime juice by 0.25–0.5 oz. To make in batches (4 servings), multiply ginger beer by 32 oz, lime juice by 3 oz, and honey by 2 tbs; combine honey and lime in a pitcher, then add ginger beer and ice just before serving.
