Combine and Shake
Chill a coupe or rocks glass by filling with ice and setting aside. In a cocktail shaker, add 2 oz raspberry vodka, 0.75 oz Giffard's peach liqueur, 0.5 oz fresh lemon juice, 0.5 oz agave syrup, and 1 cup of ice. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the mixture is well-diluted.
Prepare Glass and Strain
Dump the ice used to chill the glass and, if desired, add fresh ice to serve over (for on-the-rocks) or leave empty for a neat/coupe presentation. Strain the shaken cocktail through a fine mesh strainer (or the shaker's strainer) into the chilled glass.
Float Blue Curaçao
Using the back of a bar spoon held just above the surface of the drink, slowly pour 0.25 oz blue curaçao so it floats on top creating a layered blue-green hue reminiscent of gummy candy. Pour gently to preserve the float.
Garnish & Serve
Serve immediately. Note: the blue curaçao float will gradually mix into the cocktail as it sits, adjusting the color and sweetness. Enjoy responsibly.
