Prepare glass (optional)

Rim the glass

If using a flavored rim, rub a lime wedge around the outer edge of the glass then dip the rim into the sweet chili-lime salt or Tajín to coat. Set glass aside.

Mixing the cocktail

Combine spirits and mixers

Fill a cocktail shaker or mixing glass with ice. Add 2 oz Captain Morgan spiced rum, 0.5 oz sweet chili-lime rum (or 0.5 oz plain rum plus 0.25–0.5 tbs sweet chili-lime syrup), 0.75 oz fresh lime juice, and 0.75 oz tropical passionfruit syrup.

Shake

Cap the shaker and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain over ice

Fill the prepared highball or mule-style glass with fresh ice (about 1 cup). Strain the shaken mixture into the glass over the ice.

Top with ginger beer

Gently top the cocktail with about 4 oz chilled ginger beer. Stir once gently with a bar spoon to combine, taking care not to flatten the beer.

Garnish & serve

Garnish with a lime wheel or wedge and a sprig of fresh mint. Serve with a straw if desired. Advise the guest to gently stir before sipping to keep flavors integrated.
