Muddle cucumber

Place 4 thin cucumber slices in the cocktail shaker. Using a muddler or the back of a bar spoon, gently muddle 6 times until the cucumber releases aroma and a little juice but is not pulverized. The goal is light vegetal flavor, not pulp.

Add liquids

Add 2 oz Empress gin, 0.75 oz fresh lime juice, 0.25 oz fresh lemon juice, and 0.5 oz agave syrup to the shaker.

Shake with ice

Add 6 ice cubes to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the outside is frosted.

Double strain (optional)

Prepare your serving glass (coupe or highball) with 4 ice cubes if serving on the rocks; otherwise chill the glass. Strain the cocktail through the shaker’s strainer and, if you prefer a clearer drink, through a fine strainer to remove cucumber bits.

Optional top

If you want a slightly lighter, spritz finish, top the strained cocktail with ~1 oz club soda and briefly stir once to combine.

Garnish

Thread a thin cucumber ribbon or wheel and a lemon twist onto a pick or lay them across the rim. Express the lemon twist over the top of the drink to release oils, then drop it in (or discard if you prefer).

Use a jigger to measure spirits and juices for balance. Use a fine strainer if you want a clear finish. Chill the glass ahead of time for best presentation.
