Method
Armadillo Eggs
Prepare jalapeños
Preheat oven to 400°F (205°C). Wearing gloves, slice each jalapeño lengthwise and remove seeds and membranes for medium heat (leave some seeds for extra heat). Rinse and pat dry. Set aside.
Make cream cheese filling
In a medium bowl, combine softened cream cheese, shredded sharp cheddar, chopped green onions, garlic powder, 1 tsp salt, and 1/2 tsp black pepper. Mix until smooth and homogenous.
Stuff jalapeños
Fill each jalapeño half with about 1 to 1.5 tablespoons of the cream cheese mixture, smoothing the top so filling stays contained. Arrange stuffed jalapeños on a tray.
Cook sausage
In a skillet over medium heat, cook the breakfast sausage until just cooked through but not overly browned, breaking it into small crumbles. Drain off excess fat and let cool slightly.
Form sausage-cheese coating
Combine the slightly cooled cooked sausage with shredded mozzarella in a bowl. Mix to distribute cheese, which will help bind the sausage into a cohesive coating.
Assemble armadillo eggs
Take a stuffed jalapeño and press it into a flattened tablespoon of the sausage–mozzarella mixture, fully encasing the pepper and creating a roughly egg-shaped ball. Repeat for all stuffed peppers. Place assembled balls on a plate.
Breading station
Set up three shallow bowls: (1) all-purpose flour seasoned with a pinch of salt, (2) beaten eggs, (3) panko breadcrumbs. Roll each sausage-covered jalapeño first in flour (shake off excess), then dip in beaten eggs, then roll in panko to coat completely. For a thicker crust, repeat egg and panko once more.
Bake until golden
Place breaded armadillo eggs on a parchment-lined or lightly greased baking sheet. Lightly brush or spray each with vegetable oil. Bake in the preheated 400°F oven for 18–22 minutes, turning once halfway through, until sausage is cooked, internal temperature reaches 160°F (71°C), and crust is golden and crispy. If you prefer extra browning, finish with 1–2 minutes under the broiler, watching closely to avoid burning.
Rest
Remove from oven and let rest 5 minutes to allow juices to redistribute and filling to set before serving.
Blackberry Cream Sauce (Signature)
Cook blackberries (optional)
If using fresh or frozen whole blackberries and you prefer a smoother, slightly jammy sauce: place blackberries in a small saucepan over medium heat with 1 tablespoon honey and 1 teaspoon white wine vinegar. Cook, stirring, 4–6 minutes until berries start to break down. Mash with a fork or small whisk to your desired texture then cool slightly. Alternatively, use fresh whole berries uncooked for a fruitier sauce.
Blend sauce
In a blender or food processor combine the cooked or fresh blackberries, sour cream, mayonnaise, remaining 1 tablespoon honey (if you didn't add earlier), 1 teaspoon white wine vinegar (if not added), 1/4 tsp salt and 1/4 tsp black pepper. Pulse until smooth. Taste and adjust seasoning and sweetness. If sauce is too thick, thin with up to 1 teaspoon of hot water or additional sour cream until it reaches a dipping consistency.
Chill and serve
Transfer sauce to a small serving bowl and chill 15 minutes if possible to let flavors meld. Spoon sauce onto plate or serve alongside armadillo eggs as a dipping sauce.
