Cake layers (chocolate sponge)

Method

Cake layers (chocolate sponge)

  1. 1

    Prepare

Preheat the oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper. Lightly dust with flour or cocoa.

  2. 2

In a large bowl, whisk together 1.5 cups all-purpose flour, 0.5 cup unsweetened cocoa powder, 1 cup granulated sugar, 1 tsp baking powder, 0.5 tsp baking soda, and 0.5 tsp salt until evenly combined.

  3. 3

In a separate bowl, whisk 2 large eggs with 0.5 cup whole milk, 0.25 cup vegetable oil, and 1 tsp vanilla extract until blended.

  4. 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Gradually add 0.5 cup hot water and mix until the batter is smooth and pourable. The hot water helps bloom the cocoa and thins the batter.

  5. 5

Divide batter evenly between the prepared pans (use a scale or eyeball). Bake for 22–28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Rotate pans halfway through if your oven has hot spots.

  6. 6

Remove from oven and let cakes cool in the pans for 10 minutes. Run a knife around the edges, invert onto cooling racks, remove parchment, and allow to cool completely (at least 1 hour) before assembling.

Buttercream & fillings (White + Brown components)

  1. 7

    Make white buttercream

In a large bowl or stand mixer fitted with the paddle or whisk attachment, beat 1 cup (2 sticks; 2 cups total specified earlier) room-temperature unsalted butter on medium speed until light and fluffy, about 3 minutes.

  2. 8

Gradually add 3 cups powdered sugar, mixing on low until incorporated. Add 1 tsp vanilla, 3 tbs heavy cream, and 1 tsp neutral oil if using. Increase speed to medium-high and beat 2–3 minutes until light and spreadable. If too sweet or thick, add up to 1–2 tbs additional cream; if too thin add more powdered sugar (up to the remaining specified amount).

  3. 9

    Make brown (chocolate) buttercream

In a separate bowl, beat remaining 1 cup (2 sticks if doubling was used) unsalted butter until smooth. Gradually add remaining 3 cups powdered sugar while mixing on low. Add 0.5 cup unsweetened cocoa powder and 3 tbs melted dark chocolate, 0.25 tsp salt, and 3 tbs heavy cream. Mix on medium-high until fully incorporated and fluffy. Taste and adjust: add 1–2 tbs more melted chocolate or cocoa for deeper brown/chocolate flavor, or a splash more cream to loosen.

  4. 10

Reserve about 1.5–2 cups of white buttercream for the Pikachu and white bear exterior details. Reserve about 1–1.5 cups of brown buttercream for the bear accents and chocolate areas. Keep both buttercreams at room temperature for easy spreading; if too soft refrigerate briefly and rewhip before use.

Assemble cake (base shaping & crumb coat)

  1. 11

Level the cooled cake layers with a serrated knife or cake leveler so they are flat and even. Place the first layer on an 8–9 inch cake board.

  2. 12

Spread a thin, even layer (about 1/2 cup) of brown buttercream onto the first layer to act as filling. If using, sprinkle 2–3 tbs dark chocolate chips over the filling for a textural surprise (press them lightly into the buttercream so they don’t shift).

  3. 13

Place the second cake layer on top. Apply a thin crumb coat of white buttercream (about 1 cup) over the entire cake to trap crumbs. Smooth the crumb coat with an offset spatula. Chill the cake in the refrigerator for 20–30 minutes until the crumb coat is firm.

Final frosting & smoothing

  1. 14

Apply a thicker final coat of white buttercream over the chilled crumb-coated cake (reserve enough to form Pikachu’s yellow areas with fondant; white buttercream will serve as background and bear areas). Smooth using an offset spatula and a bench scraper — spin the cake on a turntable for even sides.

  2. 15

Using brown buttercream, pipe or spread the bear’s brown patches (ears, around eyes if designing a two-character mashup) where desired. Use a small round piping tip or spatula to create clean edges. Keep the brown areas distinct from the white base.

Fondant decorations (Pikachu & White Brown Bear features)

  1. 16

Dust your work surface with cornstarch or powdered sugar. Roll out yellow fondant about 1/8 inch thick and cut shapes for Pikachu’s face/patch on the cake top — for example: a rounded oval for the head if constructing a 3D topper or smaller facial patches to place on the cake surface. Use toothpicks to secure larger fondant pieces to the cake (insert gently into cake; remove before serving).

  2. 17

Roll out white fondant for the white bear accents (snout, belly patches) and brown fondant for bear ears or cheeks. Use black fondant to cut small circles for Pikachu’s eye pupils, bear eyes, and nose. Use red fondant for Pikachu’s cheek circles.

  3. 18

Assemble a small Pikachu topper: shape a rounded yellow head and attach small black fondant ear tips and red cheek discs. If creating the 'White Brown Bear' look simultaneously, place white fondant bear face elements side-by-side on the cake and brown fondant for the brown bear features. Press decorations gently into the buttercream to adhere.

  4. 19

Use edible gel colors and a fine brush to add details like mouth lines, fur texture, or brown shading around the bear. Let the fondant set on the cake for 15–30 minutes before transport to ensure pieces adhere.

Finishing touches & serving

  1. 20

If desired, pipe small rosettes of yellow or white buttercream around the base or top edge to frame the characters. Use leftover brown buttercream to add shadows or outlines to enhance the character features.

  2. 21

Chill the cake lightly for 10–15 minutes to set decorations, but bring to room temperature 30–60 minutes before serving so buttercream is soft and flavors are optimal.

  3. 22

Slice and serve. Store leftovers covered in the refrigerator for up to 4 days; bring slices to room temperature before eating for best texture.
