Prepare watermelon

Chill the watermelon in the refrigerator for at least 1 hour before making shaved ice — cold fruit shaves better. Cut the seedless watermelon into 1–2 inch cubes, removing the rind completely.

Puree watermelon

Place the watermelon cubes in a high-speed blender or food processor. Add the granulated sugar, fresh lime juice, and a pinch of fine sea salt. Blend until smooth, about 30–45 seconds. Taste and adjust sweetness with additional sugar or 1–2 tablespoons of simple syrup if desired.

Strain (optional)

If you prefer a very smooth, seedless texture, pour the puree through a fine mesh sieve into a bowl, pressing gently to extract the liquid. Discard any solids. Chill the strained puree for 15–20 minutes so it is very cold before shaving.

Freeze base for shaving

Pour the watermelon puree into a shallow metal or glass baking pan (an 8x8 or 9x13 works depending on quantity) to a depth of about 1–1.5 inches. Place in the freezer uncovered for 2–3 hours, or until the mixture is firm around the edges and slushy at the center. Every 30–45 minutes, stir the mixture with a fork to create small ice crystals; this helps produce a finer shaved texture. For a faster method, freeze until firm (3–4 hours) then shave or scrape (see next steps).

Prepare ice

If using a dedicated ice shaver: add the prepared frozen watermelon blocks (freeze puree in a shallow pan or in small flat containers) to the machine and shave according to manufacturer's directions until fluffy. If you don't have a shaver: blend ice cubes (4 cups) with 2 tablespoons water in a blender using short pulses to create fine crushed ice, then fold in cold watermelon puree to color and flavor, or use a fork to scrape the frozen watermelon slab into flakes.

Assemble shaved ice

Scoop or pack the shaved/flaked watermelon ice into serving bowls or cups, mounding it to create a fluffy peak. If you made plain crushed ice and folded in puree, spoon into cups and press lightly to form a snow-like texture.

Finish & Garnish

Drizzle optional simple syrup or sweetened condensed milk over the top if you prefer extra sweetness. Sprinkle chopped mint leaves and/or fresh berries or diced fruit on top for contrast. Serve immediately with lime wedges on the side for squeezing over each portion.

To store leftovers: place any remaining shaved ice in an airtight container and freeze. It will become icier; break up with a fork and briefly pulse in a blender or food processor to restore a finer texture before serving again.
