Berry Purée
Sweetened Base
Assembly & Finish
Method
Berry Purée
- 1
Combine berries
Place the hulled strawberries, blueberries, and blackberries in a blender or food processor.
- 2
Add the granulated sugar and fresh lemon juice. Blend until smooth, about 20–30 seconds.
- 3
If the purée is too thick, add the cold water 1 tablespoon at a time and pulse until it reaches a pourable syrup consistency (about 1–2 tablespoons). Taste and adjust sweetness with up to 1 additional tablespoon sugar if needed.
- 4
Strain the purée through a fine-mesh sieve into a bowl, using the back of a spoon to press solids; this yields a smooth, bright syrup. Discard seeds/solids or reserve for toppings.
- 5
Chill the purée while you prepare the rest (5–10 minutes) or place briefly in the fridge if not serving immediately.
Sweetened Base
- 6
In a pitcher, combine 2 cups cold water or chilled unsweetened tea with 2 tablespoons simple syrup (or honey syrup). Stir until fully incorporated.
- 7
Taste the base: it should be lightly sweetened to allow the berry purée to shine. Add up to 1 tablespoon more simple syrup if you prefer sweeter.
Assembly & Finish
- 8
Fill two tall glasses evenly with ice cubes (about 1 cup ice per glass).
- 9
Pour 1/4 cup chilled berry purée into each glass (reserve remaining purée for more intense flavor or another serving).
- 10
Divide the sweetened base between the two glasses, pouring gently over the back of a spoon or down the side to create a layered look—about 1 cup base per glass.
- 11
If you want a fizzy finish, top each glass with about 1/4 cup sparkling water and gently stir once to integrate while keeping some effervescence.
- 12
Garnish each glass with 3 fresh mint leaves and 1–2 thin lemon or lime slices. Optionally, spoon a few whole berries on top.
- 13
Serve immediately with a straw or stirrer. Encourage stirring before drinking to combine the purée with the base for full flavor.
