Berry-Coffee Base
Prepare berry purees/compotes
If using fresh or frozen berries, place blackberries, raspberries and blueberries in a small saucepan with 1 tsp sugar and 1 tsp lemon juice. Cook over medium-low heat, stirring occasionally, until the berries break down and the mixture is saucy (about 4–6 minutes). For a smoother texture, press through a fine-mesh sieve to remove seeds; reserve roughly 1 tbsp blackberry puree, 1 tbsp raspberry puree and 1–2 tbsp blueberry compote. If using pre-made purees, measure and combine as listed.
Combine berry layers with espresso
In a heatproof cup or glass, spoon the blackberry puree into the bottom (about 1½ tbsp). Gently add the raspberry puree on top of the blackberry layer (about 1 tbsp). Spoon the blueberry compote next (about 1–2 tbsp). These create distinct berry streaks that will mingle with the espresso.
Brew two shots of hot espresso (or 60 ml strong coffee). Let the espresso rest 10–20 seconds so it’s very hot but not boiling, then gently pour it over the back of a spoon held just above the berry layers to create a layered look and to avoid disturbing the purees (pouring slowly helps maintain separation).
Caramel
Warm and finish caramel (if needed)
If your caramel sauce is thick or cold, warm 2 tbsp caramel in a small microwave-safe bowl for 10–15 seconds or warm gently in a small saucepan with 1 tsp butter and 1 tsp heavy cream just until smooth — do not boil. Stir to a pourable consistency.
Drizzle about 1 tbsp of warmed caramel over the espresso, letting some sink into the berry layers and some remain on the surface for a sweet marbled effect.
Milk & Foam
Steam or froth milk
Steam 1 cup of milk to 150–155°F (65–68°C) if using an espresso machine; create microfoam for a silky texture. Alternatively, heat milk on the stove until steaming (do not boil) and froth with a handheld frother or by shaking vigorously in a tightly sealed jar until foamy.
Stir 1 tbsp vanilla syrup into the steamed milk. If you want extra richness and thicker foam, fold in 2 tbsp cold heavy cream before pouring.
Slowly pour the vanilla milk over the back of a spoon held just above the espresso/caramel layer to maintain some layers, filling the cup to within about ½ inch (1–1.5 cm) of the rim. Spoon or pour remaining foam on top.
Garnish & Serve
Finish with a thin drizzle (about 1 tbsp) of extra caramel sauce across the foam in a crosshatch or spiral pattern.
Garnish with 6 whole mixed berries placed on the foam or skewered on a pick, and sprinkle 1 tsp dehydrated berry powder or crushed freeze-dried berries over the top for color and a concentrated fruit punch.
Serve immediately with a long spoon or straw. Stir before drinking to combine the triple-berry, caramel and coffee flavors, or sip layered so you experience the individual components.
