Strawberry Puree

    Prepare and macerate

    Rinse the strawberries, hull them, and quarter larger berries so pieces are roughly uniform. Place 2 cups of quartered strawberries in a medium bowl. Sprinkle 2 tablespoons granulated sugar and 1 teaspoon lemon juice over the berries, toss gently, and let sit at room temperature for 15–20 minutes. This macerates the fruit, drawing out juices and softening the berries.

    Blend puree

    Transfer the macerated strawberries and any accumulated juices to a blender or food processor. Pulse until smooth, about 20–30 seconds for a silky puree; leave a little texture if you prefer. Taste and adjust sweetness by adding up to 1 additional tablespoon sugar if needed. If the puree is too thick, add 1–2 teaspoons water, blending to reach a pourable consistency.

    Optional fine strain

    For an ultra-smooth sauce, press the puree through a fine-mesh sieve into a bowl using a spatula, discarding seeds and pulp. Otherwise, use the blended mixture as-is.

    Chill the puree in the refrigerator while you prepare the whipped cream or other components, at least 10 minutes. The flavor improves when slightly cold.

    Chill equipment

    For best results, chill the mixing bowl and beaters in the freezer for 10 minutes before whipping.

    Make whipped cream

    Pour 1 cup heavy whipping cream into the chilled bowl. Add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Whip with an electric mixer on medium-high speed until soft peaks form, about 2–3 minutes. Do not overwhip; stop when peaks hold shape but are still glossy.

    Keep the whipped cream refrigerated until ready to serve. If making ahead, re-whip briefly just before serving if it has softened.

Garnish & Serving

    Prepare garnishes

    Rinse and dry the whole small strawberries and mint leaves. Hull the garnish strawberries if you prefer, or leave whole for visual appeal. Toast shortbread or brioche slices until lightly golden if using.

    Assemble dessert

    Spoon 3–4 tablespoons of chilled strawberry puree into individual serving bowls or dessert glasses. Top each with a generous dollop (about 2–3 tablespoons) of whipped cream, or serve the puree alone for a lighter option. Arrange a whole strawberry and a mint leaf on top, and serve with a cookie or toasted brioche on the side.

    Alternatively, use the puree as a sauce over ice cream, pancakes, yogurt, or cheesecake. Store any leftover puree in an airtight container in the refrigerator for up to 3 days.
