Prepare corn (if using fresh)
If using fresh corn, remove husks and silks and cut kernels from the cobs. You should have about 3 cups of kernels. If using frozen corn, thaw and drain briefly.

Cook aromatics and ham
Heat a large skillet or medium saucepan over medium heat. Add the butter and let it melt. Add the chopped onion and cook, stirring occasionally, until translucent and beginning to brown at the edges, about 5–6 minutes. Add the minced garlic and cook 30–45 seconds until fragrant. Add the diced ham and cook 2–3 minutes to warm and let some edges caramelize.

Add corn and cheese
Stir in the corn kernels and continue to simmer for 3–4 minutes until heated through. Remove the pan from heat and stir in the grated cheddar, sour cream, chopped parsley, salt, and black pepper until the cheese is melted and the mixture is smooth. Taste and adjust seasoning as needed.

Finish on stovetop or oven
For a creamy stovetop dish: return to low heat for 1 minute to meld flavors, then serve. For a baked finish with a golden top: transfer the corn and ham mixture to a lightly buttered 8-inch or similar shallow baking dish (or individual ramekins).

Prepare topping
If using panko, toss panko breadcrumbs with the olive oil or melted butter and the extra grated cheddar (if using) until evenly moistened.

Bake until bubbly
Sprinkle the panko (and extra cheese) evenly over the corn mixture in the baking dish. Bake in a preheated 375°F (190°C) oven for 12–15 minutes, or until the topping is golden and the filling is bubbling. For a deeper crust, place briefly under the broiler (1–2 minutes) watching closely so it doesn't burn.
