Steep the tea
Pour the boiling water over 3 black tea bags in a heatproof pitcher. Cover and steep for 4–5 minutes for a robust flavor (reduce to 3–4 minutes if you prefer milder tea).

Remove tea bags and chill
Remove and gently squeeze the tea bags (do not over-squeeze to avoid bitterness). Let the brewed tea cool to room temperature for 15–20 minutes, then place in the refrigerator to chill for at least 30 minutes while you make the strawberry syrup.
Strawberry Syrup

Combine strawberries and sugar
Place 250 g quartered strawberries, 60 g granulated sugar and 60 ml water in a small saucepan.

Simmer to macerate
Bring the mixture to a gentle simmer over medium heat. Cook for 6–8 minutes, stirring occasionally, until the strawberries soften and the sugar dissolves.

Strain (optional)
For a smooth syrup, strain the mixture through a fine mesh sieve into a bowl, pressing gently to extract liquid and leaving pulp behind. If you prefer a pulpy iced tea, skip straining and let mixture cool slightly.

Cool the syrup
Transfer the strained or unstrained syrup to a jar and chill in the refrigerator until cold (about 15–20 minutes).

Assemble the drink
Fill 2 tall glasses with ice (about 1 cup ice per glass). Divide the chilled strawberry syrup between the glasses (about 2–3 tablespoons / 30–45 ml per glass depending on desired sweetness).

Add tea and lemon
Pour the chilled black tea into each glass, roughly 250 ml per glass, leaving a little room at the top. Add 7–8 ml fresh lemon juice to each glass (about 15 ml total split between two glasses). Taste and add simple syrup or extra sugar to taste if you want it sweeter.

Garnish & serve
Stir gently to combine so the strawberry syrup distributes through the tea. Garnish each glass with sliced strawberries and 3 mint leaves. Serve immediately with a straw.

Store any leftover brewed tea and chilled strawberry syrup separately in the refrigerator for up to 3 days. Combine and serve over ice when ready.
