Berry-Lemon Base

Sweetener / Simple Syrup (optional stronger sweetness)

Method

Berry-Lemon Base

  1. 1

    Prepare berries

Rinse strawberries, blackberries and raspberries under cold water. Hull and quarter the strawberries; leave the blackberries and raspberries whole. Drain well.

  2. 2

    Macerate berries

In a medium bowl or pitcher, combine the prepared berries with 1/4 cup granulated sugar and lemon zest. Use a wooden spoon or muddler to gently crush about half the berries until they release juices but some pieces remain for texture. Let sit 10 minutes to macerate.

  3. 3

    Blend base

Transfer the macerated berries (including juices) to a blender. Add 1/2 cup fresh lemon juice and 2 cups cold water. Pulse 6–8 times until smooth but not completely puréed — you want some small bits for body. If you prefer a smoother drink, blend until fully smooth.

  4. 4

    Strain (optional)

For a smoother, seed-free beverage, pour the blended mixture through a fine mesh sieve into a large pitcher, pressing on solids with a spoon to extract as much liquid as possible. Discard solids. If you like texture, skip this step and keep the fruit bits.

Sweetener / Simple Syrup (optional)

  1. 5

If you want extra sweetness or better dissolved sugar, make a quick simple syrup: combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan over medium heat. Stir until sugar dissolves and mixture just comes to a simmer. Remove from heat and cool 5 minutes. Add desired amount (start with 2 tablespoons) to the berry-lemon base and taste; add more if needed.

To Serve

  1. 6

Chill and adjust: Refrigerate the finished berry-lemon mixture for at least 20 minutes to let flavors meld. Taste and adjust sweetness or lemon if needed.

  2. 7

Serve: Fill glasses with ice (roughly 1/2 cup ice per 8 oz glass). Pour berry-lemon mixture to fill about three-quarters of each glass (about 6–8 oz). If you want a sparkling finish, top each glass with 2–3 ounces club soda or sparkling water and gently stir once.

  3. 8

Garnish: Add a lemon slice and a sprig of fresh mint to each glass. Optionally drop a few whole blackberries or a halved strawberry into the glass for visual appeal.

  4. 9

Storage: Store leftover berry-lemon mixture (without soda/ice) in a sealed container in the refrigerator for up to 3 days. Stir or shake before serving; if separation occurs, re-blend lightly.
