Coffee Base

Method

Coffee Base

  1. 1

    Brew and sweeten coffee

Brew 1.5 cups of strong coffee (or use cold brew). While still warm, stir in 1.5 tablespoons granulated sugar and 1/2 teaspoon vanilla extract until dissolved. Chill in the refrigerator until cold, about 20–30 minutes, or use pre-cooled coffee.

Fruit Purées

  1. 2

    Prepare strawberry purée

Place the hulled and quartered strawberries (1 cup), 1/2 tablespoon of the honey (or simple syrup), and 1/2 teaspoon lemon juice into a blender. Puree until smooth. Taste and add up to another 1/2 tablespoon honey if more sweetness is needed. Strain through a fine-mesh sieve into a small bowl to remove seeds if desired.

  2. 3

    Prepare mango purée

In the same blender (rinsed), add the diced mango (1 cup), remaining 1/2 tablespoon honey, and 1/2 teaspoon lemon juice. Puree until smooth. If mango is very fibrous, press through a sieve for a silkier texture. Keep the two purées separate for layering.

Assembly

  1. 4

    Build the drink

Fill two tall glasses evenly with ice (about 1 cup ice per glass, or 2 cups total). Divide the strawberry purée between the bottoms of the glasses (about 2–3 tablespoons each) and gently spoon or pour the mango purée over the strawberry layer (about 2–3 tablespoons each) to create a layered look.

  2. 5

    Add coffee and milk

Pour the chilled sweetened coffee evenly into each glass, filling to about three-quarters full. Top each glass with an equal portion of the milk (about 1/2 cup milk per glass if making 2 servings; adjust to taste). If using half-and-half for extra richness, float about 2 tablespoons on top of each glass and stir gently to create a marbled effect.

  3. 6

    Final touches

Garnish with strawberry slices, a small mango wedge on the rim, and a sprig of mint if using. Serve with a straw and a long spoon so the drinker can stir the fruit purées into the coffee as desired.
