Strawberry-Banana Base
Tea & Milk
Optional Add-ins & Garnish
Method
Strawberry-Banana Base
- 1
Cook down fruit
Place the quartered strawberries, sliced banana, granulated sugar, and lemon juice in a small saucepan. Add 1/2 cup of the cold water. Cook over medium-low heat for 6–8 minutes, stirring occasionally, until strawberries soften and the banana breaks down and sugar dissolves.
- 2
Blend and strain
Remove from heat and let cool 5 minutes. Transfer the cooked fruit to a blender, add the remaining 1/2 cup cold water, and puree until smooth (about 20–30 seconds). If you prefer a very smooth milk tea, strain the puree through a fine mesh sieve into a bowl to remove seeds and fibrous bits; press with a spoon to extract as much flavor as possible (you should end up with about 1 to 1 1/4 cups puree).
- 3
Chill the puree briefly in the refrigerator while you prepare the tea if not using immediately.
Tea & Milk
- 4
Brew strong tea
Place the 2 black tea bags in 1 cup of hot water (just-off-boil) and steep for 4–5 minutes for a robust flavor. Remove tea bags and gently press to extract liquid. Allow the tea to cool to warm, then refrigerate or set aside to cool to room temperature (about 10–15 minutes).
- 5
Combine milk components
In a measuring cup, combine the whole milk and sweetened condensed milk. Stir until well blended and slightly thickened. Taste and adjust sweetness by adding up to 1 additional tablespoon condensed milk if you prefer sweeter tea.
- 6
Once the tea is cool, combine it with the milk mixture in a pitcher and stir until uniform.
Assembly & Serve
- 7
Prepare glass
If using tapioca pearls/boba, divide 1 cup of cooked pearls between two serving glasses (about 1/2 cup each). Add a few ice cubes to each glass if desired.
- 8
Layer and mix
Divide the chilled strawberry-banana puree between the two glasses (about 1/2 cup each). Pour an equal amount of the milk-tea mixture over the puree (about 3/4 to 1 cup each) and stir gently to combine. Adjust ratio to taste — more puree for fruitier flavor, more tea for a lighter flavor.
- 9
Garnish and serve
Top with additional ice if needed, garnish with strawberry and banana slices. Serve immediately with a wide straw if using boba.
