Freeze ice cubes solid (if using fresh-made ice, ensure overnight freeze). For best texture, use distilled or filtered water to make clearer ice and slightly denser shavings.
Shaving the ice
Using a dedicated ice shaver, shave the frozen ice into fine, fluffy snow into a large chilled bowl or directly into serving bowls. If you don't have an ice shaver, pulse the ice quickly in a high-powered blender or food processor in short bursts until light and feathery. Aim for soft, powdery shavings rather than large chunks; total shaved volume will be roughly 6–8 cups.
Pack the shaved ice lightly into individual serving bowls or one large bowl, shaping into mounds. Do not compress too firmly—keep it airy so syrups penetrate evenly.
Fruit Syrups (makes ~2 cups)
Strawberry syrup
Combine chopped strawberries, 1/4 cup sugar and 2 tablespoons water in a small saucepan. Bring to a simmer over medium heat and cook until strawberries break down, about 5–7 minutes. Remove from heat, stir in 1 teaspoon lemon juice. Let cool slightly, then strain through a fine-mesh sieve to remove seeds, pressing to extract juices. Taste and add up to 1 tablespoon sugar if needed. Chill before using.
Pineapple syrup
In the same saucepan (no need to wash thoroughly between flavors), combine pineapple chunks, 1/4 cup sugar and 2 tablespoons water. Simmer 4–6 minutes until fruit softens and releases juice. Mash lightly, add 1 teaspoon lemon juice, then strain to yield a bright pineapple syrup. Adjust sugar to taste and chill.
Blueberry syrup
Combine blueberries, 1/4 cup sugar and 2 tablespoons water in a saucepan. Simmer 3–5 minutes until skins pop and mixture thickens slightly. Stir in 1 teaspoon lemon juice. For a smoother syrup, strain; for rustic texture keep as-is. If syrup is too thick after cooling, thin with up to 1–2 tablespoons water.
For convenience you can combine any one fruit syrup with up to 2–4 tablespoons of water to reach desired pourable consistency. Chill syrups before assembling shaved ice to keep the ice from melting too quickly.
Sweetened Condensed Milk Drizzle (optional)
Warm the sweetened condensed milk briefly (10–15 seconds) in the microwave or by placing the container in warm water so it pours smoothly. Transfer to a squeeze bottle or small spoon for drizzling.
Assembly & Garnish
Spoon or mound shaved ice into individual serving bowls if you haven't already. Choose 1–3 syrups per bowl and drizzle over the top so color layers form through the fluffy ice. Use about 2–4 tablespoons syrup per bowl, more if you prefer sweeter/stronger flavor.
Top with optional garnishes: spoon 2–3 tablespoons mochi pieces or sweet red bean, sprinkle 1 teaspoon toasted coconut flakes, add a few fresh mint leaves and a lime wedge on the side. Serve immediately with a long spoon.
If preparing ahead for a party, keep shaved ice in an insulated cooler or frozen container and keep syrups chilled separately. Assemble just before serving to preserve the light texture.
