Fruit Syrup

Cook fruit compote
In a small saucepan combine raspberries, blueberries, sugar, and water. Stir to combine and bring to a gentle simmer over medium heat.

Once simmering, reduce heat to low and cook for 6–8 minutes, stirring occasionally, until fruit breaks down and the mixture thickens slightly.

Remove from heat and stir in lemon juice. Taste and adjust sweetness if needed by adding up to 1 tablespoon more sugar.

Strain the cooked mixture through a fine-mesh sieve into a bowl, pressing on solids with the back of a spoon to extract as much syrup as possible. Discard seeds and pulp (or reserve for another use). Let syrup cool to warm or room temperature (about 10 minutes). You should have roughly 3–4 tablespoons of syrup.

Brew a double shot (about 2 oz) of espresso or prepare 2 oz of very strong brewed coffee. Keep hot.

While coffee is brewing, pour milk into a small saucepan and warm over medium-low heat until it reaches about 140°F (60°C) and small bubbles appear at the edges, or heat to your preferred temperature.

Froth the warmed milk using a steam wand, handheld frother, or whisk vigorously until you have velvety microfoam. Aim for 1–1.5 times the volume in microfoam for a cappuccino texture.

Assemble Cappuccino

Spoon 2–3 tablespoons of the reserved raspberry-blueberry syrup into the bottom of a warmed 8–10 oz cappuccino cup. For a lighter fruit flavor use 1 tablespoon; for more pronounced flavor use 3 tablespoons.

Pour the hot espresso directly over the fruit syrup so it blends and dissolves slightly. Stir briefly to combine syrup and coffee.

Dust the top with a light pinch of cocoa powder or grated chocolate. Garnish with the fresh raspberries, blueberries, and a mint sprig if using.
