    Prep pineapple

    Peel, core, and roughly chop the fresh pineapple so you have about 2 cups packed pieces.

    Simmer syrup

    Combine chopped pineapple, 1 cup sugar, 1 cup water, and 1 tsp salt in a medium saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer. Cook, stirring occasionally, until the pineapple is very soft and the liquid is slightly thickened, about 12–15 minutes.

    Blend and strain

    Remove from heat and let cool for 5 minutes. Transfer the mixture to a blender and add 1 tablespoon lime juice. Blend until very smooth, about 30–45 seconds. For a clear, silky syrup, strain the puree through a fine-mesh sieve into a bowl, pressing on solids to extract as much liquid as possible. Discard or reserve the solids for another use.

    Chill

    Taste the syrup and adjust sweetness or acidity (add up to 1–2 tsp more sugar or a little more lime if desired). Chill the strained syrup in the refrigerator for at least 30 minutes to cool completely before assembling shaved ice.

Shaved ice and assembly

    Prepare ice

    If you have an ice shaver, freeze the ice in molds or use large clear blocks for best texture. Allow ice to sit at room temperature for 1–2 minutes before shaving so it shaves into fluffy flakes rather than hard shavings.

    Shave ice

    Using an ice shaver or a strong food processor/blender capable of crushing ice finely, shave or finely crush 1 to 1 1/4 cups of ice per serving until you have light, fluffy snow-like ice. Pack the shaved ice into chilled bowls or cups, forming a generous mound.

    Dress with syrup

    Generously spoon or pour the chilled pineapple syrup over the shaved ice, allowing it to soak in. Use about 1/4 to 1/3 cup syrup per serving, adjusting to taste. For layered flavor, pour some syrup between layers of shaved ice as you build the mound.

    Optional condensed milk drizzle

    If you like a creamy finish, warm the sweetened condensed milk slightly (10–15 seconds in the microwave) to loosen it and drizzle about 2 tablespoons over each serving of syrup-soaked shaved ice.

    Garnish and serve

    Top each serving with a tablespoon or two of fresh pineapple chunks, a sprinkle of toasted macadamia nuts for crunch, and a couple of mint leaves for color and aroma. Serve immediately with a spoon and a straw for any extra syrup.

    Storage note

    Leftover pineapple syrup will keep in a sealed container in the refrigerator for up to 7 days. Shaved ice should be eaten immediately; it will melt and lose texture if stored.
