Prepare syrup

In a small saucepan combine 1 cup passion fruit pulp, 1 cup sugar, and 1 cup water. Stir to distribute sugar and heat over medium. Bring to a gentle simmer, stirring occasionally until the sugar dissolves completely, about 4–6 minutes.

Once simmering, lower heat and let the mixture cook for 3–4 minutes more to meld flavors, then remove from heat. Stir in 1 tablespoon fresh lime juice and 1 teaspoon sea salt. Taste and adjust: add a little more sugar if too tart or a splash more lime if you want brighter acidity.

If you prefer a seed-free syrup, strain the warm mixture through a fine-mesh sieve into a clean container, pressing on the solids to extract liquid. Refrigerate the syrup until chilled, at least 30 minutes. If keeping seeds for texture and visual interest, skip straining and chill.

Sweetened Condensed Milk Drizzle

In a small bowl whisk 1 cup sweetened condensed milk with 2 tablespoons whole milk or evaporated milk until pourable and smooth. Cover and chill until ready to serve. Adjust thickness with additional milk (1 tsp at a time) if too thick to drizzle.

Shaved Ice + Assembly

Prepare the ice for shaving. Use an ice shaver, blender, or food processor: if using a blender/food processor pulse the ice in small batches until fine, snow-like texture forms. If you have a dedicated ice shaver, shave the ice directly from blocks for the best fluffy texture.

Divide shaved ice among four serving bowls or cups, packing lightly to form mounds (about 2 cups shaved ice per serving).

Generously spoon chilled passion fruit syrup over each mound of shaved ice, using about 1/4 cup syrup per serving (adjust to taste). If you reserved seeds, distribute them evenly so each serving has some seeds for texture.

Drizzle sweetened condensed milk mixture over the top of each serving (about 1–2 tablespoons per serving) to add creaminess and sweetness.

Garnish each bowl with 2 fresh mint leaves and sprinkle 1/2 tablespoon toasted coconut flakes if using. Serve with a lime wedge on the side to squeeze over the top for extra brightness.
