    Prepare grapes and berries

    Rinse all fruit under cold water and drain well. Remove stems from red and green grapes; if grapes are large, halve them. Hull strawberries and quarter them. Place grapes and strawberries into a large mixing bowl.

    Prepare other fruit

    Cut pineapple into small 1/2-inch dice. Peel and slice kiwi into coins then halve the coins if pieces are large. If using fresh mandarins, peel and segment; if using canned, drain well. Add pineapple, kiwi, and mandarin segments to the bowl with grapes and strawberries.

    Gently toss the fruit together with a large spoon so pieces mix but do not break. Set aside while you make the dressing so flavors begin to mingle (5–10 minutes).

    Make the dressing

    In a small bowl, whisk together fresh lime juice and honey until honey is fully dissolved. Stir in finely chopped fresh mint and orange zest. Add a pinch of sea salt to brighten flavors.

    Combine and chill

    Pour the dressing over the fruit and gently fold to coat all pieces evenly. Taste and adjust: add another teaspoon honey if you prefer sweeter, or a little more lime juice for brightness. Cover the bowl and refrigerate for at least 20 minutes to allow flavors to meld (up to 2 hours).

    Serve

    Before serving, give the salad a gentle stir. Transfer to a serving bowl or individual dishes and sprinkle with the optional coarse sugar for a light sparkle and additional orange zest or a few whole mint leaves for garnish. Serve chilled.
