    Make purée

    Place the chopped ripe mango flesh, granulated sugar, lime juice, and cold water in a blender or food processor. Purée on high until completely smooth, about 30–45 seconds. Taste and adjust sweetness with up to 1 additional teaspoon sugar if needed. If the purée is very thick, add up to 1 tablespoon more cold water to reach a pourable but still slightly thick consistency.

    Strain (optional): For an ultra-silk texture, press the purée through a fine-mesh sieve into a bowl, discarding fibers. This yields a glossy mango coulis ideal for layering.

Coffee Base

    Prepare espresso

    Brew about 3 oz of very strong espresso or strong coffee. If your espresso is extremely concentrated, you can add up to 1 oz hot water to reach a balanced strength. Stir in optional simple syrup if you want a sweeter drink.

    Keep the brewed coffee hot and set aside while you prepare the milk foam.

Milk & Foam

    Heat and flavor milk

    Combine whole milk, heavy cream, and vanilla extract in a small saucepan. Warm gently over medium-low heat until steaming and small bubbles form around the edge (160–165°F / 71–74°C). Do not boil. Remove from heat.

    Froth the warmed milk and cream mixture using a steam wand, milk frother, or handheld electric frother until you develop dense microfoam with a glossy texture (about 20–40 seconds with a steam wand, 30–60 seconds with an electric frother). Aim for a velvety microfoam rather than large airy bubbles.

    Give the milk pitcher a few gentle taps on the counter and swirl to settle large bubbles and polish the foam before pouring.

Assembly

    Layer the mango

    Pour 2–3 tablespoons of the mango purée (or strained coulis) into the bottom of a warmed 10–12 oz cappuccino cup or glass. For a more intense mango flavor, use up to 1/4 cup.

    Add coffee

    Carefully pour the hot espresso over the mango purée so the mango and coffee create a layered effect. Hold back a little coffee if you want a stronger top layer.

    Finish with milk foam

    Slowly pour the steamed milk into the cup, using a spoon to hold back foam initially, then spoon the thick microfoam on top to form a mousse-like cap. You want roughly equal parts espresso, steamed milk, and foam for a cappuccino-style ratio.

    Dust lightly with ground cinnamon and a pinch of turbinado sugar or cocoa powder if desired. Garnish with a mango slice on the rim.
