Prep

Line two baking sheets with silicone mats or parchment paper. Fit a piping bag with a plain round tip (8–10 mm) or leave un-tipped. Sift together the powdered sugar and almond flour into a bowl, pressing through the sieve to remove any lumps. Place aging egg whites in a clean, grease-free mixing bowl; bring to room temperature (about 20–30 minutes) if not already.

Make Italian Meringue

Combine granulated sugar (30 g) with 30 ml water in a small saucepan and bring to a boil. Use a candy thermometer and heat to 118°C (244°F) for Italian meringue. Meanwhile, start whipping the egg whites on medium speed until foamy, then gradually add the fine sugar (20 g) and continue whipping to soft peaks. When syrup reaches 118°C, remove from heat and slowly pour the hot syrup in a thin stream into the whipping whites while mixer runs on medium-high. Increase speed to high and whip until glossy, stiff peaks form and the meringue has cooled to near room temperature (about 5–7 minutes).

Macaronage

Fold the sifted almond flour + powdered sugar mixture into the meringue in three additions. Add lime zest and food coloring at the last addition. Use a spatula to fold: cut through the mixture, scoop under, and turn; press against bowl sides to deflate—mix until the batter flows in a thick ribbon and when dropped from the spatula it levels out within about 10–15 seconds. Be careful not to overmix (too runny) or undermix (stiff).

Pipe

Transfer batter to the piping bag. Pipe 3–4 cm (1.5 in) rounds about 2 cm apart onto prepared sheets. Tap the baking sheet firmly on the counter 2–3 times to release air bubbles. If bubbles remain, gently pop with a toothpick. Let piped shells rest at room temperature for 30–60 minutes, or until a thin dry skin forms on top and they are no longer tacky to the touch.

Bake

Preheat oven to 150°C (300°F). Bake one sheet at a time on the middle rack for 12–15 minutes, rotating halfway through if your oven has hot spots. The shells are done when they have formed feet and the tops are smooth and firm. Remove from oven and cool completely on the baking sheet before removing (10–15 minutes).

Storage of Shells

Once cool, match shells by size. If not assembling immediately, store shells in an airtight container in the refrigerator for up to 48 hours or freeze for up to 1 month (place parchment between layers). Bring to room temperature before filling.

Beat Butter

Place room-temperature butter in a mixing bowl and beat on medium speed until pale and creamy, about 2–3 minutes.

Add Sugar

Gradually add powdered sugar (160 g) in two additions, mixing on low to combine, then increase speed to medium-high and beat until fluffy.

Flavor

Add lime juice, lime zest, vanilla extract, honey, pinch of sea salt, and heavy cream. Beat on medium-high until smooth and light, 1–2 minutes. Taste and adjust: add up to 1 tsp more lime juice if you prefer brighter acidity, or 1–2 tsp more powdered sugar if too loose. If too thick, add a tiny drop more cream; if too thin, add a tablespoon more powdered sugar.

Assembly Preparation

Transfer buttercream to a piping bag fitted with a small round tip (5 mm) or use a spoon. Chill briefly if it becomes soft—about 10 minutes in the refrigerator—so it holds shape when piping.

Assembly & Finishing

Fill

Pair shells of similar size. Pipe about 1 teaspoon (or a 1/2-inch mound) of buttercream onto the flat side of one shell, then gently sandwich with the matching shell, twisting once to spread evenly to the edge. Avoid overfilling to keep feet intact.

Age

Place filled macarons in an airtight container and refrigerate for 24 hours to allow flavors to meld and texture to mature (this improves chewiness and flavor). Bring to room temperature 20–30 minutes before serving.

Decorate

If desired, gently press a small edible lime blossom or edible flower onto the top of each macaron and dust lightly with edible shimmer or confectioners' dust just before serving.

Serve at room temperature. Store leftovers refrigerated in an airtight container up to 5 days. For longer storage, freeze for up to 1 month; thaw in the refrigerator and bring to room temperature before serving.
