    Brew coffee

    Brew 1 cup of very strong coffee or pull about 1 cup of espresso. The coffee should be hot (around 85–90°C / 185–194°F) so the chocolate melts cleanly.

    In a small heatproof bowl or directly in the coffee mug, whisk together 1 tablespoon unsweetened cocoa powder and 1 teaspoon granulated sugar. Add about 2 tablespoons of the hot coffee and stir to make a smooth chocolate paste with no lumps.

    Pour the remaining hot coffee into the chocolate paste and stir until the cocoa and sugar are fully dissolved. Add 1 ounce chopped dark chocolate and stir until melted and incorporated. Keep the mixture hot on low heat or set aside while you prepare milk/foam.

Lemon Component

    Add 1 teaspoon fresh lemon juice and 1 teaspoon finely grated lemon zest to the hot coffee-mocha mixture. Stir thoroughly and taste. The lemon should brighten the chocolate and coffee but not overpower them. Adjust to preference, but avoid adding much more lemon juice so the drink does not curdle when milk is added.

Milk & Foam

    In a small saucepan, combine 3 oz whole milk and 1 tablespoon heavy cream (optional). Heat gently over medium-low heat until steaming but not boiling (about 60–65°C / 140–150°F).

    Froth the milk using a milk frother, French press, or whisk until you have a dense microfoam. If you don’t have a frother, vigorously whisk or shake the heated milk in a tightly sealed jar for 30–45 seconds.

    Slowly pour the frothed milk into the coffee-mocha-lemon mixture, holding back foam with a spoon. Then spoon the foam on top. Stir very gently once to integrate flavors if needed.

Finish & Garnish

    Taste and sweeten if desired with up to 1 teaspoon simple syrup or additional sugar. Stir gently to combine.

    Garnish with a lemon twist or a thin lemon slice placed on the cup rim. Lightly dust the foam with 1/4 teaspoon grated dark chocolate or a pinch of cocoa powder to complement the mocha notes.

    Serve immediately while hot. Note: because lemon is acidic, avoid adding excessive lemon juice to prevent the milk from curdling; the amounts given balance brightness with creaminess.
