Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, granulated sugar, melted butter, and grated lime zest in a bowl and mix until texture resembles damp sand and holds together when pressed.

Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch tart pan with a removable bottom (or a 9-inch pie plate) to form an even crust layer about 1/4–1/2 inch thick.

Bake the crust for 8–10 minutes until set and fragrant. Remove from oven and let cool while you prepare the filling.

Prepare cream cheese base
Reduce oven temperature to 325°F (160°C). In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and free of lumps (about 2–3 minutes). Scrape down the bowl.

Add the sweetened condensed milk gradually while mixing on low speed until combined and silky.

Add the egg yolks one at a time, mixing just until incorporated; avoid overbeating to reduce air in the filling.

Stir in fresh lime juice, lemon juice, lime zest, vanilla extract, and mix until smooth. The mixture should be pourable but slightly thick.

Optional light mousse
In a separate chilled bowl, whip the cold heavy cream with powdered sugar to soft-medium peaks. Fold about one-third of the whipped cream into the filling to lighten it, then gently fold in the remaining cream until uniform. This step yields a lighter, more mousse-like texture for the Key Ayheart.

Pour the filling into the cooled crust, smoothing the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

Bake the tart in the preheated 325°F (160°C) oven for 18–22 minutes, or until the edges are set and the center is slightly jiggly (it will firm as it chills). Avoid overbaking to keep a silky texture.

Remove from oven and let cool at room temperature for 30 minutes, then transfer to the refrigerator to chill for at least 4 hours, preferably overnight, to fully set and develop flavor.
